Any way you slice it, everyone at your wedding is going to look forward to the moment you newlyweds cut the cake. Not only do they want to see whether you and your guy feed each other a sweet nibble or go whole hog with cake in your hair and frosting on your cheeks, but they also can’t wait to see this artistically decadent creation up close and to taste what’s inside. And what’s inside is entirely up to you. There are more fillings to choose from than ever before. If you can dream it, almost certainly your cake designer can bake it — and has.

Some couples are set on a cake made from organic ingredients; others skip the cake altogether and opt for a chocolate bar, pastry cart, or sundae station. But for those looking for inspiration for a tall traditional tower, we’ve seen three definite trends emerging. Banded cakes — with a band of ribbon or fondant around the base of each layer, can be simply modern and sophisticated. Cakes with floral accents — either real or made of frosting — are always popular and quite photogenic. Eccentric cakes have their place too, as couples shy away from cookie-cutter cakes in favor of a treat that matches their entire wedding aesthetic.
